Indulge in a decadent cookie dough marshmallow slice, adorned with crispy pretzels and luxurious dark chocolate drizzle.
Ingredients:
  • 125g butter, chopped, at room temperature
  • 155g (3/4 cup, firmly packed) brown sugar
  • 4.40 gm vanilla extract, plus 4.40 gm, extra
  • 225g (1 1/2 cups) plain flour
  • 30g (1/4 cup) malted milk powder
  • 41.20 gm milk
  • Pinch of salt
  • 190g (1 cup) dark choc chips
  • 9.00 gm gelatine powder
  • 155g (3/4 cup) caster sugar
  • 60g dark choc melts, melted
  • 30g pretzels, lightly crushed
Instructions:
  • Place a sheet of baking paper in the bottom and along two long sides of a 18 x 28cm slice pan, leaving enough paper to hang over the edges.
  • In a bowl, beat butter, sugar, and vanilla with electric beaters until light and creamy. Add flour, milk powder, milk, and salt. Stir with a large metal spoon until a soft dough forms. If the mixture is too firm, add a little more milk. Mix in choc chips and press into prepared pan.
  • In a heatproof bowl, pour in 60ml (1/4 cup) of cold water and sprinkle the gelatine powder over it. Place the bowl in a saucepan of simmering water and stir until the gelatine is completely dissolved.
  • Beat sugar, extra vanilla, and 60ml (1/4 cup) cold water with electric beaters in a bowl for 3 minutes until sugar is dissolved. Slowly add the warm gelatine mixture and beat on high for about 4 minutes until thick and fluffy.
  • Spread the marshmallow over the cookie dough swiftly. Drizzle with melted chocolate, sprinkle with pretzels, and refrigerate for 1 hour until firm. Cut into pieces before serving.
