Indulge in decadent chocolate-covered truffle pops sprinkled with toffee - the ultimate dessert for entertaining.
Ingredients:
  • 6 tablespoons butter or margarine, softened
  • 2 tablespoons shortening
  • 1/2 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons fat-free egg product
  • 1 1/4 cups graham cracker crumbs
  • 3/4 cup miniature semisweet chocolate chips
  • 1 bag (8 oz) toffee bits
  • 30 paper lollipop sticks
  • 6 oz chocolate-flavored candy coating (1 cup), chopped, melted
  • 1 large block white plastic foam
Instructions:
  • In a large bowl, use an electric mixer to blend butter, shortening, brown sugar, and granulated sugar until light and fluffy. Add egg product and vanilla, then mix on low speed while adding graham cracker crumbs until blended. Fold in chocolate chips and 3/4 cup of toffee bits. Cover and refrigerate for about 1 hour until firm.
  • Prepare a cookie sheet with waxed paper. Form the dough into 1-inch balls and place them on the prepared sheet. Chill in the refrigerator until firm for about 30 minutes. Keep refrigerated until ready to bake.
  • Take out a few cookie dough balls from the refrigerator. Dip the end of a lollipop stick about half an inch into melted candy, then insert it into a cookie dough ball halfway. Dip each ball into the melted candy to cover halfway, tap off any excess. Roll the coated side in the remaining toffee bits. If the candy is too thick, reheat it in the microwave. Insert the other end of the stick into a foam block and let it set. Store the treats loosely covered in the refrigerator.
