Indulgent chocolate cookie ice cream sandwiches are the ultimate summer dessert. Easy recipe with cake mix and any ice cream flavor of your choice - guaranteed to please a crowd!
Ingredients:
  • 1 (18.25 ounce) package chocolate cake mix
  • 0.5 cup butter, softened
  • 2 eggs
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup butterscotch chips
  • 1 teaspoon vanilla extract
  • 0.5 gallon vanilla ice cream, softened
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and lightly grease those baking sheets.
  • Combine cake mix, butter, eggs, chocolate chips, butterscotch chips, and vanilla in a large bowl. Shape dough into 2-inch balls and arrange them 2 inches apart on baking sheets. Bake for 10 minutes in the preheated oven. Ensure cookies are set but soft. Cool briefly on baking sheet before transferring to wire racks to finish cooling.
  • Scoop ice cream and sandwich between cookies, pressing gently. For clean edges, run a spoon around the ice cream. Quickly assemble all cookies, lay on a baking sheet, and freeze until solid. Serve when frozen. Store sandwiches in a freezer bag for up to two weeks.
