Whip up these quick and delicious sugar cookie ice cream sandwiches with enough for 6 servings.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 0.5 cup butter, melted
  • 2 large egg yolks
  • 0.5 teaspoon almond extract
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 1 pint vanilla ice cream
  • 2 tablespoons colored candy sprinkles (jimmies)
Instructions:
  • Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine sugar, melted butter, egg yolks, vanilla extract, and almond extract in a bowl. Mix in flour, baking soda, salt, and candy sprinkles until well combined.
  • Use a medium-sized spring-hinged scoop to portion the dough evenly onto the prepared baking sheet.
  • Bake in the preheated oven for 10-12 minutes until cookies spread, crackle, and appear dry on top.
  • Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
  • Spread a generous 1/4 cup of ice cream on one cookie and top it with another cookie to create the perfect ice cream sandwich.
