Indulgent strawberry crumb bars with a luscious low-sugar strawberry filling.
Ingredients:
  • nonstick cooking spray
  • 1.5 cups self-rising flour
  • 0.5 teaspoon ground cinnamon, divided
  • 0.5 cup unsalted butter, cut into 8 pieces
  • 0.33333334326744 cup low-sugar strawberry compote
  • 2 tablespoons rolled oats
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C), then lightly grease and line a 8x6-inch pan with parchment paper.
  • In a large bowl, combine flour, sugar, and 1/4 teaspoon of cinnamon. Add butter and mix until it resembles small pebbles. Incorporate the egg using a pastry cutter. Gently knead the dough until blended. Reserve 1/2 cup of dough for the topping.
  • Press the remaining dough into the bottom of the pan and spread strawberry compote on top.
  • Mix oats and the rest of the cinnamon into the dough that was set aside. Take small portions of the dough and use them to cover the strawberry compote as completely as you can.
  • Bake until the top is golden brown, the edges pull away from the pan, about 40-45 minutes. Allow to cool completely before serving.
