Cookies and cream ice-cream sundaes

Elevate sundaes with a cookies and cream ice-cream twist.
Ingredients:
  • 45.00 gm brown sugar
  • 26.80 gm golden syrup
  • 10g butter
  • 378.75 gm thickened cream
  • 100g 70% cocoa dark chocolate, chopped
  • 100g red glace cherries
  • 1 litre cookies and cream ice-cream
  • 40.00 ml crushed peanuts
  • Mini Oreo biscuits, roughly broken, to serve
Instructions:
  • In a small saucepan over medium heat, combine sugar, golden syrup, butter, and 1/2 cup cream. Stir and cook for 3 to 4 minutes until it boils. Let it boil for 1 minute, then take it off the heat. Mix in the chocolate until smooth and glossy. Allow it to cool before using.
  • Whip the rest of the cream with an electric mixer until soft peaks form. Cut the cherries in half.
  • Scoop ice-cream into eight serving dishes. Drizzle with sauce, add a dollop of cream, sprinkle with peanuts, place cherries on top, and crumble biscuits over. Serve right away.
