Delight the family with this simple and irresistible cookies and cream slice - a hit with kids!
Ingredients:
  • 350g Oreo biscuits
  • 150g unsalted butter, melted
  • 6.00 gm powdered gelatine
  • 400g cream cheese
  • 300ml thickened cream
  • 4.40 gm vanilla extract
  • 110g caster sugar
  • 200g white chocolate, melted, cooled slightly
  • Melted dark chocolate, to drizzle
Instructions:
  • Cover the base and sides of a 4cm-deep, 18 x 25cm lamington pan with plastic wrap.
  • Pulse 250g of biscuits in a food processor until fine. Add butter and pulse to mix. Press mixture into pan base. Refrigerate for 30 minutes.
  • Gently sprinkle the gelatine over 1/4 cup (60ml) of cold water in a heatproof cup. Set the cup in a pan of simmering water and stir until the gelatine dissolves.
  • Combine cream cheese, cream, vanilla, and caster sugar in an electric mixer bowl. Beat until smooth before stirring in the gelatine mixture and melted white chocolate.
  • Chop the leftover biscuits and fold them in, then drizzle the cream cheese mixture over the cooled base.
  • Chill in the fridge, covered with plastic wrap, overnight until set.
  • Before serving, generously drizzle the melted dark chocolate over the dish and then proceed to slice it directly in the pan.
