Cookies and cream truffles

Easy-to-make, delightful cookies and cream bites, perfect for gifting.
Ingredients:
  • 3 x 23g packets mini Oreo cookies
  • 180g block white chocolate, chopped
  • 63.13 gm thickened cream
  • 1 1/2 x 180g blocks white chocolate, chopped, extra
Instructions:
  • Take 1 packet of cookies and add them to a small food processor. Pulse until finely chopped. Halve the remaining cookies.
  • In a heatproof bowl set over simmering water, melt chocolate and cream together until smooth, stirring constantly for about 5 minutes. Chill in the refrigerator for 10 minutes. Fold in cookie crumbs, then refrigerate for 30 minutes until set.
  • Shape 2 level teaspoons of chocolate mixture into a ball, and place it on a tray lined with baking paper. Continue shaping the rest of the mixture into 16 balls. Freeze for 30 minutes or until firm.
  • Put extra white chocolate in a microwave-safe bowl. Microwave on HIGH for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until melted. Let it rest for 1 minute. Dip truffles into the chocolate one by one, and use a fork to remove, letting any excess chocolate drip off. Place the coated truffles back on the tray. Press gently to secure 1 cookie half on each truffle. Chill for 15 minutes or until set. Serve and enjoy.
