Copycat KFC Mashed Potatoes

Satisfy your KFC mashed potato cravings with this delicious copycat recipe!
Ingredients:
  • 3 pounds russet potatoes, peeled and cut into 1-inch pieces
  • 1 tablespoon salt, divided
  • 0.75 cup half-and-half
  • 0.5 cup butter
  • 0.25 teaspoon black pepper
  • chopped fresh parsley, for garnish
Instructions:
  • Place potatoes in a large saucepan and cover with cold water by 1 inch. Stir in 1 1/2 teaspoons salt and bring to a boil over medium-high heat. Cook until potatoes are fork-tender but still firm, about 10 minutes. Drain well.
  • Put the potatoes back in the saucepan and cook over low heat, stirring occasionally, until excess liquid evaporates and the potatoes are dry, about 1 minute. Then, run the hot potatoes through a potato ricer into a large bowl.
  • In a small saucepan, gently warm the half-and-half and butter until the butter is melted, about 3 minutes. Pour this mixture into the riced potatoes and stir well. Season with pepper and the remaining salt. Finish by garnishing with parsley.
