Copycat Nature Valley™ Oats 'n Honey Bars

Make homemade Nature Valley™ Oats ‘n Honey bars with natural, wholesome ingredients.
Ingredients:
  • 2 1/2 cups quick-cooking or old-fashioned oats
  • 1/4 teaspoon baking soda
  • Slightly less than 1/4 teaspoon kosher salt
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup sugar
  • 1 teaspoon vanilla
Instructions:
  • Preheat oven to 350° F. Line an 8-inch square pan with parchment paper, leaving some overhang on two sides.
  • Combine 2 cups of oats in a large bowl. Blend the remaining 1/2 cup of oats into flour using a blender or food processor. Mix the oat flour with the oats in the bowl. Stir in the baking soda and salt.
  • Microwave coconut oil in a bowl until melted. Mix in honey, sugar, and vanilla, then combine with oats. Stir thoroughly to coat oats. Press firmly and evenly into a pan.
  • Bake until oats are golden and fragrant with honey. Let them cool on a rack for 10 minutes. Use the parchment paper overhangs to easily remove from the pan and cut into 8 rectangles while warm. Allow to cool completely before wrapping - the bars will become firm and crispy as they cool.
