Create a delicious copycat strawberry shortcake ice cream topping using strawberry gelatin and golden cookies for a sweet and crunchy finish.
Ingredients:
  • 40 vanilla sandwich cookies (such as Oreo Golden Original Sandwich Cookies®)
  • 1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
  • 0.5 cup unsalted butter, melted
  • 0.25 teaspoon almond extract
  • 0.125 teaspoon kosher salt
Instructions:
  • Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  • Pulse cookies in a food processor until finely crumbled, about 20-30 seconds.
  • Combine 2 cups of crumbs with gelatin, melted butter, almond extract, and salt in a large bowl until mixed. Spread evenly on the baking sheet.
  • Bake until edges are lightly golden, about 10-12 minutes in the preheated oven. Allow it to cool completely for about 20 minutes.
  • In a large bowl, combine the remaining half of the cookie crumbs. Return the cooled strawberry-cookie mixture to the food processor and pulse 10 to 12 times until fine crumbs form. Add the strawberry-cookie mixture to the remaining cookie crumbs in the bowl and mix until fully combined.
