Cauliflower crust pizza with pureed roasted corn, bacon, green onions, and Parmesan cheese.
Ingredients:
  • 1 (12 ounce) package frozen cauliflower pizza crust
  • 0.66666668653488 cup frozen roasted corn, thawed
  • 2 teaspoons water, or as needed
  • 2 ounces grated Parmesan cheese
  • 4 tablespoons frozen roasted corn, thawed
  • 4 slices crisp-cooked bacon, finely chopped
  • 2 green onions, sliced
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a cookie sheet or pizza pan by lining it with parchment paper.
  • Lay the crust onto the pan that has been prepared.
  • Blend 2/3 cup of corn kernels in a blender until velvety. Add water gradually, 1 teaspoon at a time, if necessary. Spread the creamy corn puree evenly on the crust, leaving a small border. Sprinkle 2 ounces of Parmesan cheese evenly over the puree.
  • Evenly layer 4 tablespoons of corn, bacon, and green onions on top of the corn puree and cheese. Sprinkle 2 tablespoons of Parmesan cheese over the top.
  • Bake until the crust turns a beautiful golden brown and becomes crispy, for about 13 to 15 minutes. Serve while warm.
