Corn and lime dip

Host a football viewing party with friends and serve up a delicious zesty corn dip alongside crunchy corn chips.
Ingredients:
  • 420g can corn kernels
  • 1 bunch coriander
  • 3 shallots, finely sliced
  • 250g sour cream
  • pinch cayenne pepper
  • 1 lime, rind finely grated and juiced
  • Corn chips, to serve
Instructions:
  • Drain a 420g can of corn kernels in a sieve, pressing out the liquid with the back of a spoon. Wash and dry a bunch of coriander, then pick the leaves and roughly chop them.
  • Mix together the fresh corn kernels, fragrant coriander leaves, thinly sliced shallots, creamy sour cream, a hint of cayenne pepper, and the zest and juice of a lime. Chill in the refrigerator for a minimum of 1 hour to enhance the flavors.
  • Enjoy the dips with crunchy corn chips.
