Versatile and delicious fritters perfect for any meal.
Ingredients:
  • 115g (3/4 cup) self-raising flour
  • 125ml (1/2 cup) milk
  • 1 egg, lightly whisked
  • 1 270g can corn kernels, drained
  • 50g semi-dried tomatoes, roughly chopped
  • 40.00 ml chopped fresh coriander
  • Salt & ground black pepper
  • Melted butter, for greasing
  • 105g (1/3 cup) sweet chilli relish, to serve
Instructions:
  • In a medium bowl, sift the flour and create a well in the center. In a separate jug, whisk together the milk and egg. Gradually pour the milk mixture into the flour, whisking to create a smooth batter. Stir in the corn, tomatoes, coriander, salt, and pepper.
  • Prepare a large non-stick frying pan by lightly greasing it with melted butter and heating it over medium-high heat. Spoon four 1/4-cup portions of the corn mixture into the pan separately. Cook for 2 minutes until bubbles form on the surface. Flip and cook for an additional 1-2 minutes until golden and cooked through. Transfer to a plate and loosely cover with foil to keep warm. Repeat with the rest of the corn mixture. Serve the fritters with a side of sweet chili relish.
