Festive Christmas appetizers for a crowd.
Ingredients:
  • 75.00 gm self-raising flour
  • 1 egg
  • 195.00 gm buttermilk
  • 1 green onion, thinly sliced
  • 310g can corn kernels, drained
  • Olive oil cooking spray
  • 117.50 gm sour cream
  • 20.00 ml chopped fresh dill
  • 20.00 ml chopped fresh chives
  • 1 tsp finely grated lemon rind
  • 700g prawn
Instructions:
  • In a bowl, combine flour, egg, and buttermilk, whisking until smooth. Gently fold in onion and corn.
  • 1. Prepare a large non-stick frying pan by spraying it with oil and placing it over medium-high heat. 2. Spoon 2 teaspoons of the mixture for each blini into the pan. Cook 6 blini for 2 minutes on each side until they are lightly browned and cooked through. 3. Transfer the cooked blini to a wire rack to cool. 4. Repeat the process to make a total of 24 blini.
  • Mix together sour cream, fresh dill, chives, and lemon zest in a bowl.
  • Arrange the blini neatly on a platter. Generously spread each with a dollop of sour cream mixture and crown with a succulent prawn. Season to perfection with a sprinkle of salt and pepper. Present and enjoy!
