Corn fritters

Kid-approved corn fritters for the whole family.
Ingredients:
  • Olive oil cooking spray
  • Chutney, to serve
  • Chopped chives, to serve
  • 150.00 gm self-raising flour
  • 130.00 gm buttermilk
  • 2 eggs
  • 420g can corn kernels, drained
  • 310g can creamed corn
  • 62.50 ml finely chopped chives
Instructions:
  • In a large bowl, sift the flour, season with salt and pepper, then stir until fully combined. Create a well in the center.
  • In a jug, combine buttermilk and eggs, then pour into flour mixture along with corn kernels, creamed corn, and chives. Using a large metal spoon, gently fold everything together until just combined (avoid overmixing).
  • Preheat the oven to 150°C. Heat a non-stick frying pan over medium heat until hot. Remove from heat, spray with oil, and return the pan to the heat. Spoon heaped tablespoonfuls of mixture onto the pan, spreading each into 8cm rounds using a knife.
  • Cook until bubbles form on the surface, then flip and cook until fritters are firm. Keep warm in the oven while cooking the rest. Plate, garnish with chives, and serve with chutney.
