Irresistible fried corn fritters - versatile as a starter, side dish, or snack. Delicious drop batter with sweet corn kernels.
Ingredients:
  • 3 cups oil for frying
  • 1 cup sifted all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon white sugar
  • 1 large egg, lightly beaten
  • 0.5 cup milk
  • 1 tablespoon shortening, melted
  • 1 (12 ounce) can whole kernel corn, drained
Instructions:
  • Prepare all your ingredients and heat up some oil in a heavy pot or deep fryer until it reaches 365 degrees F (185 degrees C).
  • In a medium bowl, mix flour, baking powder, salt, and sugar. In a separate small bowl, whisk together egg, milk, and melted shortening. Combine the egg mixture with the flour mixture, then gently fold in the corn.
  • In batches, spoon fritter batter into the hot oil and fry until golden brown.
  • Lift fritters out with a slotted spoon and let them rest on paper towels to drain.
  • Garnish and savor!
