Satisfying and delectable corn fritters for guilt-free indulgence.
Ingredients:
  • 49.50 gm self-raising flour, sifted
  • 20.00 gm cornflour
  • 2 eggs, separated
  • 64.38 gm reduced-fat milk
  • 420g can corn kernels - No Added Salt
  • 2 spring onions, finely sliced
  • 18.40 gm canola oil
  • Sweet chilli sauce, to serve
Instructions:
  • In a bowl, combine self-raising flour and cornflour. Add 2 egg yolks and milk, stir until well mixed.
  • Beat the eggwhites until they form stiff peaks, then delicately combine them with the flour mixture. Drain and rinse the corn kernels before incorporating them into the flour mixture. Finally, mix in the spring onions.
  • 1. Heat the oil in a non-stick frying pan until sizzling. Spoon heaped tablespoons of the mixture into the pan and fry until golden brown on both sides. Serve with a drizzle of sweet chili sauce for extra flavor.
