Kid-approved sweetcorn salsa - a guaranteed hit with the little ones!
Ingredients:
  • 4 corn on the cob
  • ½ a bunch of fresh coriander
  • ½ a fresh red chilli
  • 4 spring onions
  • 3 ripe tomatoes
  • sea salt
  • 2 limes
Instructions:
  • 1. Heat a griddle pan over medium-high heat. 2. Cook the corn on the hot pan for about 15 minutes until heated through and slightly golden, flipping with tongs for even cooking. 3. Allow the corn to cool on a cutting board. 4. Secure the corn with a towel and cut off the kernels into a bowl. 5. Roughly chop coriander leaves and add to the bowl. 6. Slice the chili in half lengthwise. 7. Use a spoon to remove seeds and white pith from the chili halves. 8. Finely slice half of the chili and add it to the bowl. 9. Slice the spring onions and add to the bowl. 10. Chop the tomatoes and add them to the bowl with a pinch of salt. 11. Squeeze the limes into the bowl, add olive oil, mix, and serve.
