Master a mouthwatering corn salsa recipe surpassing Chipotle's - simple to create, undeniably addictive.
Ingredients:
  • 2 ears fresh corn on the cob
  • 1/2 cup minced red onion
  • 1 jalapeño chili pepper, seeded and minced
  • 1/4 teaspoon ground cumin
  • 1/3 cup chopped cilantro, including tender stems
  • 2 teaspoons fresh oregano, chopped (or 1 teaspoon dry)
  • 1 teaspoon kosher salt
  • 2 tablespoons lime juice
Instructions:
  • Prepare the corn: Remove husks, cut cobs in half, and steam in a covered pot with 1 inch of boiling water for about 5 minutes, adjusting time based on desired tenderness. Feel free to microwave or grill the corn if preferred.
  • Remove kernels: Once the corn has cooled, place a smaller bowl upside-down inside a larger one. Hold the cob by the stem and cut the kernels off by slicing downwards along the sides of the cob.
  • Mix it all together: Add the corn kernels and remaining ingredients to a bowl. Toss well to combine. Serve alongside fish tacos, chicken tacos, quesadillas, fajitas, or steak.
