Delicious corn and cashew nut patties: a crowd-pleasing blend of flavors and textures.
Ingredients:
  • 310g can corn kernels, well drained (see note)
  • 300g can chickpeas, drained, rinsed
  • 125.00 ml roasted cashew nuts
  • 2 green onions, sliced
  • 1 tsp grated fresh ginger
  • 13.60 gm desiccated coconut
  • 82.50 ml coriander leaves, chopped
  • 42.00 gm lime juice
  • 1/4 tsp cayenne pepper
  • 40.00 ml plain flour
  • 57.50 gm canola oil
Instructions:
  • Combine corn, chickpeas, cashews, onions, ginger, coconut, coriander, lime juice, cayenne pepper, and salt in a food processor. Blend until finely chopped and blended. Transfer mixture to a bowl and stir in flour.
  • Shape heaping tablespoons of mixture into flavorful patties, then refrigerate for 30 minutes to enhance the flavors.
  • In a non-stick frying pan over medium heat, gently fry patties, 4 at a time, for 3 minutes on each side until golden brown. Transfer to a plate and keep warm while cooking the remaining patties. Serve and enjoy your meal.
