Gourmet chicken breasts with sweet peaches, wine, and vanilla for a tantalizing dinner experience.
Ingredients:
  • 4 corn-fed chicken breasts* with skin (wingbone attached, optional)
  • 18.20 gm olive oil
  • 48.00 gm light muscovado* or brown sugar
  • 4 small peaches, skinned*
  • 600ml muscat or sweet white wine
  • 125ml chicken stock
  • 2 vanilla pods, split, seeds scraped
  • Watercress, to garnish
Instructions:
  • Preheat oven to 200°C. Season chicken, then sear in oil in an ovenproof frypan until golden on both sides. Transfer the pan to the oven and bake for 8 minutes. Sprinkle chicken with sugar, add peaches, wine, stock, and vanilla pods and seeds to the pan. Return pan to oven for 8 minutes more, basting twice with pan juices. Remove chicken and peaches and keep warm. Simmer the cooking juices on the stove for 2-3 minutes to reduce. Serve chicken with peaches and vanilla sauce, and garnish with watercress.
