Cornbread Chex Mix

Oklahoma-inspired snack mix with the delicious flavors of homemade cornbread.
Ingredients:
  • 8 cups Corn Chex™ cereal
  • 2 cup pecan halves
  • 1/4 cup butter
  • 1/3 cup sugar
  • 1/3 cup light corn syrup
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 1 bag (4 oz) crunchy toasted corn kernel nuts
  • 1 teaspoon salt
Instructions:
  • Combine cereal and pecan halves in a large microwave-safe bowl.
  • In a microwavable measuring cup, heat butter, sugar, and corn syrup uncovered on High for 1 minute. Stir and microwave for about 30 seconds more until bubbling. Pour over cereal mixture and stir until coated. Sprinkle dry cornbread mix on top and toss until well coated. Stir in corn kernel nuts.
  • Microwave on High for 4 to 5 minutes, stirring every minute until the muffin mix is dissolved and dry. Spread on wax paper or foil, sprinkle with salt, let cool, then store in an airtight container.
