Ingredients:
  • 1 pound fresh strawberries, hulled
  • 0.5 cup white sugar
  • 0.5 cup cold water
  • 2 teaspoons fresh lemon juice
  • 0.75 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1.75 cups buttermilk
  • 1.25 cups cornmeal
  • 3 tablespoons unsalted butter, divided, or more as needed
  • 2 large eggs
Instructions:
  • Prepare all ingredients.
  • In a saucepan over medium-high heat, combine strawberries, sugar, water, and lemon juice. Bring to a simmer, then reduce heat to medium. Cook until strawberries are very soft and syrup thickens, stirring occasionally, for 15 to 20 minutes.
  • Strain the mixture through a mesh sieve into a bowl, discarding any seeds and fibrous bits. Allow the syrup to cool for 15 minutes, then cover and refrigerate until ready to use.
  • Combine flour, sugar, baking powder, baking soda, and salt in a bowl, whisking until fully mixed and set aside.
  • In a saucepan over medium heat, whisk together buttermilk, cornmeal, and 2 tablespoons of butter until the butter melts and the mixture starts to simmer. Cook and stir until very thick, about 2 minutes. Remove from heat and let it cool for 10 minutes.
  • Gently blend eggs into the cooled cornmeal mixture until well combined. Incorporate the reserved flour mixture and mix with a spatula until fully combined and no flour is visible in the saucepan. The batter should be thick but smooth enough to scoop.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Pour 1/3 cup of batter for each pancake into the skillet and flatten them with a spatula. Cook for 3 to 4 minutes until edges look dry. Flip and cook for another 3 to 4 minutes until done. Add more butter as needed for remaining pancakes.
  • Drizzle strawberry syrup over freshly cooked pancakes.
