Delicious corn pancakes, perfect for any meal or as a sweet treat drizzled with honey.
Ingredients:
  • 2 cups fresh sweet corn kernels
  • 1 cup milk
  • 1 cup butter, melted and cooled
  • 1 cup white sugar
  • 4 eggs
  • 2 cups pancake mix, sifted
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease and flour a 9x13-inch baking dish.
  • In a blender, mix corn, milk, butter, sugar, and eggs until smooth. Transfer mixture to a bowl and mix in pancake mix until well blended. Pour batter into a prepared baking dish.
  • Bake until a toothpick inserted in the center comes out clean, about 45 minutes in the preheated oven.
