Whip up a light and tasty honey cornbread using evaporated milk, canned corn, and pancake mix to enhance any meal.
Ingredients:
  • 1 (15.25 ounce) can sweet corn, drained
  • 1 cup cornbread mix (such as Jiffy®)
  • 1 cup pancake mix with buttermilk
  • 0.5 cup evaporated milk
  • 0.5 cup white sugar
  • 0.33333334326744 cup vegetable oil
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon honey
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking pan.
  • In a large bowl, mix together corn, cornbread mix, pancake mix, evaporated milk, sugar, oil, butter, honey, and salt until well combined. Transfer the mixture into the prepared baking pan.
  • Bake in the preheated oven for approximately 30 minutes until golden brown and a toothpick inserted into the center comes out clean.
