Corned Beef Jerky

Create homemade corned beef jerky with a dehydrator for a flavorful on-the-go snack or camping treat.
Ingredients:
  • 2.5 pounds flat-cut corned beef brisket
  • 0.5 tablespoon brown sugar
  • 0.5 tablespoon ground coriander seed
  • 0.5 tablespoon smoked paprika
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon ground dry mustard
  • 0.5 teaspoon garlic powder
Instructions:
  • Trim any excess fat from the brisket, then slice it thinly into 1/8-inch thick slices against the grain. For easier slicing, consider chilling the brisket in the freezer for 1 hour beforehand.
  • In a small bowl, mix brown sugar, coriander, paprika, black pepper, mustard, and garlic powder until fully blended.
  • Evenly distribute and massage the brown sugar mixture onto the corned beef strips until well combined.
  • Arrange the strips on the dehydrator trays, ensuring they have enough space between them.
  • Preheat the dehydrator to 155 degrees F (69 degrees C) following the manufacturer's instructions. Dehydrate the strips for 2 hours. Flip them over and continue dehydrating until they reach your desired consistency, about 1 1/2 hours.
  • After turning off the dehydrator, allow the jerky to rest uncovered for 1 hour to finish drying. Then, transfer the jerky to an airtight container and refrigerate.
