Whip up a tasty corned beef and tater tot casserole, a simple twist on corned beef hash. Perfect for sharing with loved ones!
Ingredients:
  • 1 tablespoon olive oil
  • 2 (12-ounce) cans canned corned beef (such as Libby’s)
  • 1 small yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 8 ounces Cheddar cheese, shredded (about 2 cups)
  • 1 (28-ounce) package frozen potato tots (such as Tater Tots)
  • 12 large eggs
  • 1/2 cup whole milk
  • 1/4 teaspoon black pepper
  • 1 teaspoon kosher salt, divided
  • 2 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Sliced pickled jalapeños if desired, for garnish
Instructions:
  • Preheat your oven to 350°F.
  • In a large nonstick skillet over medium-high heat, heat oil. Add corned beef, onion, and bell pepper. Cook, stirring occasionally with a wooden spoon until corned beef is browned and vegetables soften, about 10 minutes.
  • Assemble the casserole: Layer the corned beef mixture in a 9x13-inch baking dish. Sprinkle evenly with cheese, then arrange potato tots on top. In a large bowl, whisk together eggs, milk, black pepper, and 1/2 teaspoon salt until well combined; pour over tots. In a small bowl, combine smoked paprika, chili powder, garlic powder, and remaining 1/2 teaspoon salt. Sprinkle mixture evenly on top of the casserole.
