Indulge in hearty Corned Beef with veggies and tangy mustard sauce - perfect for winter comfort.
Ingredients:
  • 1 large brown onion, coarsely chopped
  • 2 large carrots, peeled, cut into 3cm pieces
  • 1.5kg corned beef
  • 500g golden delight potatoes, peeled, cut into 5cm pieces
  • 2 dried bay leaves
  • 10 whole black peppercorns
  • 3 whole cloves
  • 32.00 gm brown sugar
  • 125.00 ml cider vinegar
  • Chopped fresh flat-leaf parsley, to serve
  • 50g butter
  • 40.00 ml plain flour
  • 515.00 gm Full Cream Milk
  • 11.80 gm wholegrain mustard
Instructions:
  • - Preheat the slow cooker on high. - Add the fragrant onion and sweet carrot. - Top it off with the juicy beef. - Artfully arrange the tender potatoes around the beef. - Sprinkle with bay leaves, peppercorns, cloves, sugar, and a splash of vinegar. - Gently pour in 1.5 litres of warm water. - Reduce the heat to low, cover, and let it simmer for 8 hours until the beef is melt-in-your-mouth tender.
  • In a saucepan over medium heat, melt butter until bubbling. Add flour and stir continuously for 1 minute. Remove from heat and whisk in milk until smooth. Return to heat and cook for 3 minutes until thickened. Season with salt, pepper, and mustard.
  • Take out the beef and vegetables from the cooker. Remove the bay leaves, cloves, and peppercorns. Slice the beef. Serve alongside the mustard sauce, vegetables, and parsley.
