Simple and filling cornmeal griddle cakes, perfect for a delicious brunch with butter and syrup.
Ingredients:
  • 1.5 cups cornmeal
  • 1 cup boiling water
  • 1 cup all-purpose flour
  • 3 tablespoons white sugar
  • 2 tablespoons butter, melted
  • 2 tablespoons baking powder
  • 1 pinch salt
  • 1.5 cups milk
  • 1 egg, beaten
Instructions:
  • In a large bowl, pour cornmeal and cover with boiling water. Allow it to sit for about 5 minutes until slightly softened. Then, stir in flour, sugar, melted butter, baking powder, and salt. Mix in milk and egg until the batter is smooth.
  • 1. Preheat a lightly greased griddle over medium heat. Spoon batter on the griddle and cook until edges are dry, about 2-3 minutes. Flip and cook until golden brown, another 2-3 minutes. Repeat with remaining batter.
