Cornmeal-Crusted Catfish

25-minute crispy cornmeal catfish - a classic seafood delight.
Ingredients:
  • 1/4 cup yellow cornmeal
  • 1/4 cup dry bread crumbs
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 pound catfish fillets, about 3/4 inch thick
  • 1/4 cup fat-free ranch dressing
  • Chopped fresh parsley, if desired
Instructions:
  • Preheat oven to 450°F. Grease the broiler-pan rack with cooking spray, then combine cornmeal, bread crumbs, chili powder, paprika, garlic salt, and pepper in a mixing bowl.
  • Peel off the fish skin, cut into 4 pieces, brush with dressing, coat with cornmeal, place on a rack in a broiler pan, bake for 15 minutes until flaky, sprinkle with parsley.
