Cornmeal-crusted cod with zesty lime dip, pan-fried to crispy perfection. Indulge in the ultimate fried fish delight!
Ingredients:
  • 12 small cod filets
  • 1/4 cup lime juice
  • 2/3 cup cornmeal
  • 2/3 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup olive oil
Instructions:
  • Rinse the cod filets under cool running water and gently pat them dry.
  • In a shallow bowl, pour in the lime juice. In another shallow bowl, combine cornmeal, flour, salt, and pepper, whisking them together.
  • In a large cast-iron skillet over medium heat, heat oil and butter. Dip cod in lime juice using tongs, letting excess drip off. Coat fish with cornmeal mixture on all sides, then set aside on a plate.
  • In a hot skillet, fry cod until crispy golden brown on one side for 2 to 3 minutes. Carefully turn and fry until the fish is golden brown on the other side and flakes easily with a fork, about 1 minute more. Depending on the thickness of the fillets, you may need to fry in batches.
  • Transfer the fish to a wire rack positioned over a drip tray to collect any extra oil. Enjoy promptly.
