Cos and tomato salad

Impress guests with this effortless last-minute salad.
Ingredients:
  • 1 baby cos lettuce, leaves separated, torn in half
  • 250g cherry tomatoes, halved
  • 2 Lebanese cucumbers, halved lengthways, thickly sliced diagonally
  • 1 small red onion, cut into thin wedges
  • 62.50 ml small fresh basil leaves
  • 62.50 ml fresh flat-leaf parsley leaves
  • 36.40 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
Instructions:
  • In a large bowl, mix together lettuce, tomato, cucumber, onion, basil, and parsley. In a small bowl, whisk together oil, vinegar, salt, and pepper to make a dressing. Drizzle the dressing over the salad and toss to combine. Serve.
