Creamy avocado salad, a refreshing complement to spicy Creole dishes.
Ingredients:
  • 65g (1/4 cup) whole-egg mayonnaise
  • 37.60 gm sour cream
  • 41.60 gm buttermilk
  • 21.00 gm fresh lemon juice
  • 11.80 gm Dijon mustard
  • 4 bacon rashers, coarsely chopped
  • 3 baby cos lettuces, leaves separated, washed, dried
  • 1 ripe avocado, halved, stone removed, peeled, coarsely chopped
  • 100g Swiss brown mushrooms, thinly sliced
Instructions:
  • Mix together creamy mayonnaise, tangy sour cream, rich buttermilk, zesty lemon juice, and pungent mustard in a small bowl. Season with a pinch of salt and a crack of black pepper to taste.
  • Preheat a non-stick pan over high heat. Add the bacon and cook, stirring occasionally, for 2-3 minutes until it turns golden brown.
  • In a large bowl, toss together the lettuce, bacon, avocado, and mushrooms. Drizzle with the dressing before serving.
