Indulge in homemade beignets, reminiscent of Cafe du Monde's famous treats. Perfect for a cozy morning with a cup of coffee.
Ingredients:
  • 0.5 cup water
  • 1 tablespoon yeast
  • 0.25 cup shortening
  • 0.5 cup sugar
  • 1 teaspoon salt
  • 1 cup boiling water
  • 1 cup evaporated milk
  • 2 eggs, beaten
  • 7.5 cups flour
  • 1 quart vegetable oil for frying
  • 1 cup confectioners' sugar for dusting
Instructions:
  • In a small bowl, gently pour in 1/2 cup of room temperature water. Sprinkle the yeast over the water, allowing it to dissolve for approximately 5 minutes.
  • In a large bowl, mix shortening, sugar, and salt until combined. Pour boiling water over the mixture, then stir in evaporated milk. Allow the mixture to cool to lukewarm before adding yeast mixture and beaten eggs.
  • Gradually blend the flour into the mixture until a smooth dough ball forms. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes to 1 hour.
  • Take a portion slightly larger than a baseball size of dough and roll it out to 1/8-inch thickness. Cut the dough into 2 to 3-inch wide strips, then cut them again in the opposite direction at an angle to create diamond shapes.
  • Preheat a heavy-bottomed skillet filled with oil over medium-high heat until it reaches 360°F (180°C) for frying.
  • Gently lower the dough into the oil to prevent splashing. Fry until they puff up and turn golden brown, which should take about 3 to 5 minutes. Transfer them to a rack with paper towels underneath to cool. Once cool enough to handle, place the beignets in a clean paper bag with confectioners' sugar and shake to coat generously, or use a sifter to dust them with powdered sugar.
