Ingredients:
  • 1 sheet frozen puff pastry, just thawed
  • 1 egg, lightly whisked
  • 25g Simply Unsalted Butter
  • 1 brown onion, coarsely chopped
  • 1 carrot, peeled, finely chopped
  • 150g cup mushrooms, quartered
  • 120g (3/4 cup) frozen peas
  • 120g (3/4 cup) frozen corn kernels
  • 20.00 ml plain flour
  • 40g pkt French Onion Soup Mix
  • 300ml ctn thickened cream
  • 185ml (3/4 cup) milk
  • ½ x hot Classic Homestyle Roast Chicken, meat shredded
Instructions:
  • 1. Preheat your oven to 220C/200C fan forced and line a large baking tray with baking paper. 2. Cut the pastry into 16 equal squares and arrange them on the tray, slightly overlapping the corners in a decorative pattern large enough to cover the top of a 2L (8 cup) square or rectangular pie dish. 3. Brush the pastry with egg wash. 4. Bake for 15-20 minutes until the pastry is golden and puffed.
  • In a skillet over medium-high heat, melt the butter until sizzling. Sauté the onion and carrot for 5 minutes until the onion is soft, then add the mushroom, peas, and corn. Continue cooking for another 5 minutes until the mushroom begins to soften, stirring occasionally.
  • Coat vegetables with flour, add soup mix, then stir in cream and milk until combined. Add chicken and season with black pepper. Simmer and stir constantly for 5-10 minutes until chicken is heated through and mixture thickens. Add extra milk or water if needed.
  • Spread the chicken mixture into the pie dish and cover it with the decorative pastry before serving.
