Delicious cheese-filled perogies with a twist. Enjoy boiled or fried in butter, perfect with sour cream. Make extras to freeze for later.
Ingredients:
  • 1.75 cups dry-curd cottage cheese
  • 2 egg yolks
  • 0.75 teaspoon salt
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 2 tablespoons vegetable oil
  • 0.75 cup cold water
Instructions:
  • Combine cottage cheese, egg yolks, and 3/4 teaspoon of salt in a medium bowl. Set aside.
  • Combine flour, 1 teaspoon of salt, and baking powder in a separate bowl. Add vegetable oil and cold water, then knead into a smooth dough.
  • On a floured surface, roll out the dough and cut into 3-inch circles using a glass, can, or cookie cutter. Add a dollop of the cottage cheese filling onto each circle. Fold in half and seal by pinching the edges together.
  • 1. Boil a pot of lightly salted water. Gently add the perogies and cook until they float (about 3 to 4 minutes). Use a slotted spoon to transfer to a cooling rack over a baking sheet to drain.
