Cottage rolls recipe

Delicious and nutritious vegetarian sausage rolls will win you over in no time.
Ingredients:
  • 250g cottage cheese
  • 70g walnut
  • 21.00 gm soy sauce
  • 125.00 ml finely grated carrot
  • 45g breadcrumbs
  • 90g rolled oats
  • 3 (25cm x 25cm) sheets frozen ready-rolled puff pastry, thawed
  • 20.60 gm milk
  • 20.00 ml poppy seeds (optional)
Instructions:
  • Preheat your oven to 200°C. Line 2 baking trays with non-stick baking paper. In a food processor, combine cottage cheese, eggs, onion, pecans, and soy sauce until smooth. Transfer the mixture to a large bowl.
  • Combine the vibrant carrots, crispy breadcrumbs, and hearty oats, ensuring they are thoroughly mixed. Shape the mixture into six equal portions.
  • Cut each pastry sheet in half. Lightly brush with milk. Shape one portion of the mixture into a log 3cm from the edge of the long side of the pastry. Roll up to enclose the filling, then cut into six pieces crossways. Place on a baking tray. Repeat with the remaining pastry and mixture. Brush the rolls with milk and sprinkle with poppy seeds, if desired. Bake for 35 minutes or until golden.
