Homemade wood-fired pizza on fresh bread crust.
Ingredients:
  • 4 thick slices wood-fired bread
  • 20ml (2 tbsp) extra virgin olive oil, plus extra to drizzle
  • 2 garlic cloves
  • 150g red cherry tomatoes, halved
  • 150g yellow cherry tomatoes, halved
  • 3 large bocconcini, chopped or 12 cherry bocconcini
  • 20.00 ml chopped fresh basil
  • 2 tsp fresh thyme sprigs, roughly chopped
Instructions:
  • Preheat a chargrill pan or grill on high heat. Brush both sides of the bread with half of the oil. Grill the bread until it develops grill marks on both sides. While it's still warm, rub it with a garlic clove.
  • Combine the crushed garlic, remaining oil, tomato, bocconcini, basil, and thyme in a bowl. Mix well and season with salt and pepper to taste.
  • Preheat the oven to 200°C. Arrange the bread slices on a tray and spread the topping evenly among them. Bake for 10 minutes, or until the cheese is nice and soft.
  • Before serving, generously drizzle the dish with extra oil and season with salt and pepper to enhance the flavors.
