Instant Pot Rustic Country Bread

Make rustic whole wheat bread in Instant Pot, pairs perfectly with butter, olive oil, or jam.
Ingredients:
  • 2.3333332538605 cups bread flour
  • 1 cup whole wheat flour
  • 2 teaspoons kosher salt
  • 2.25 cups warm water (105 to 115 degrees F (41 to 46 degrees C)), divided
  • 1 (.25 ounce) package active dry yeast
Instructions:
  • Combine bread flour, whole wheat flour, and salt in a large bowl, mixing until thoroughly combined; set aside.
  • Whisk together 1 1/4 cups warm water and yeast in a small bowl until foamy and fragrant, around 10 minutes at room temperature.
  • Create a well in the flour mix and add the yeast mix. Use a spatula to combine until a rough dough forms. Transfer to a floured surface, knead for approximately 10 minutes, adding flour as needed until dough is smooth and elastic.
  • Form dough into a ball and place in a generously greased large bowl. Cover the bowl with a moist, warm towel and let it rise in a cozy spot until doubled in size, approximately 2 hours.
  • Grease a 7- to 8-inch round cake pan with cooking spray, line the bottom with parchment paper, and then lightly grease the parchment paper with cooking spray; set aside.
  • Press down on dough with your fingers to slightly deflate it, then move it to a lightly floured work surface. Gently knead the dough 2-3 times, keeping air bubbles intact. Shape the dough into a smooth ball on the work surface. Transfer the dough to the cake pan and lightly dust with flour before tightly covering with aluminum foil.
  • Pour in the remaining 1 cup of water into your multi-functional pressure cooker along with a steam rack, such as an Instant Pot. Place the cake pan onto the rack. Close and lock the lid, then set the vent to the Sealing position. Choose the Manual/Yogurt setting and adjust the timer to 1 hour. Let the dough rise and double in size inside the cooker. Cancel the program once done.
  • Preheat the oven to 450 degrees F (230 degrees C) while you prepare the rest of the dish.
  • Set your Instant Pot to Manual/Pressure Cook setting, choose high pressure following the manufacturer's instructions, and set the timer for 40 minutes. Allow 3 to 5 minutes for the pressure to build.
  • Follow the manufacturer's instructions to release pressure naturally for 8 to 10 minutes. Unlock and remove the lid, then carefully take out the hot cake pan and remove the aluminum foil.
  • Place the cake pan in the preheated oven and bake the bread until it turns golden brown, which should take around 20 minutes. Take the bread out of the pan and place it on a wire rack to cool completely for approximately 30 minutes. Slice the loaf into 3/4-inch thick slices using a bread knife.
