Chewy bread perfect for sandwiches. Start ahead for extra flavor. Mix in bread machine, bake for hole-filled texture.
Ingredients:
  • 0.75 cup spring water
  • 0.25 teaspoon bread machine yeast
  • 1.75 cups bread flour
  • 1 cup spring water
  • 0.5 teaspoon bread machine yeast
  • 2 cups bread flour
  • 0.33333334326744 cup whole wheat flour
Instructions:
  • Prepare the bread dough by combining 3/4 cup spring water, 1/4 teaspoon bread machine yeast, and 1 3/4 cup bread flour in the bread machine pan. Use the dough cycle to knead for 5 minutes, then stop the machine and allow the dough to rise overnight.
  • Transfer the starter from the bread machine pan to a non-metallic container. Keep 1/3 cup for this recipe and freeze the rest for future use.
  • Combine 1/3 cup reserved starter, 1 cup spring water, 1/2 teaspoon yeast, 2 cups bread flour, whole wheat flour, and salt in a large bowl. Use the Dough Cycle on your machine and start it. After 10 minutes, take out the dough, transfer it to a lightly oiled bowl, cover with a damp towel, and let it rise until doubled for about 2 hours. Deflate the dough and allow it to rise again until doubled, approximately 1 hour.
  • Transfer the dough onto a lightly floured surface and shape it into a round loaf. Put the loaf on a baking sheet dusted with cornmeal. Cover and allow it to rise until almost doubled, approximately 40 minutes. Preheat the oven to 400°F (200°C) while the dough is rising.
  • Mist loaf with water and place in oven. Spritz loaf every 2 minutes in the first 10 minutes of baking. Bake for 40 minutes, until bottom of loaf sounds hollow when tapped.
