Country Italian potato bake recipe

Indulge in a cozy Italian potato bake with layers of herbs, melted cheese, and prosciutto. A taste of rustic Italy in every bite!
Ingredients:
  • 1.5kg white potatoes, peeled, very thinly sliced
  • 70g (1 cup) finely grated parmesan
  • 100 (1 cup) grated mozzarella
  • 40g butter, finely chopped
  • 3 garlic cloves, crushed
  • 2 tsp dried Italian herbs
  • 160ml (2/3 cup) Chicken Style Liquid Stock
  • 4 thin slices prosciutto (see notes)
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 9cm-deep, 11.5cm x 20cm loaf pan and line the base and sides with baking paper, leaving a 5cm overhang on all sides.
  • Layer the prepared pan with slices of potato, creating 2 layers over the base and sides. Sprinkle evenly with 1/4 cup each of parmesan and mozzarella. Add another 2 layers of potato on top. Finish by topping with 1 tablespoon each of the cheeses, 1/4 of the butter, and a sprinkle of garlic and herbs for added flavor.
  • Drizzle 2 tablespoons of stock over the dish and layer with a slice of prosciutto. Add 2 layers of potato and repeat the layering process with cheeses, butter, garlic, herbs, stock, and prosciutto three more times. Arrange the remaining potato slices over the top, making sure it's more than 2 layers, and sprinkle with the remaining cheese.
  • Cover the cheese with the overhanging baking paper and seal the pan tightly with foil. Bake for 1 hour, then remove the foil and bake for an additional 30 minutes until the top is golden and the potato is tender. Let it rest in the pan for 40 minutes before carefully transferring the potato bake onto a serving plate. Serve by slicing into portions.
