Country Fried Ribs with Zesty Buttermilk Ranch Dressing

Make crispy St. Louis ribs by coating them in crushed Ritz crackers and pan-frying until golden.
Ingredients:
  • 3 racks St. Louis style ribs
  • salt and pepper to taste
  • 1 cup all-purpose flour for dredging
  • 6 eggs, beaten
  • 2 sleeves RITZ Crackers
  • 1 tablespoon coarsely ground black pepper
  • 1 teaspoon granulated garlic
  • 4 cups vegetable oil for frying
  • 2 tablespoons Cajun seasoning, for ribs
  • 1.25 cups mayonnaise
  • 1 cup buttermilk
  • 0.25 cup finely chopped chives
  • 0.25 cup freshly grated Parmigiano-Reggiano cheese
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons red wine vinegar
  • 2 teaspoons minced garlic
Instructions:
  • Preheat the oven to a gentle 250 degrees F (120 degrees C) while setting up a steamy environment by placing a wire rack over a shallow baking pan and pouring in 1 cup of water.
  • Season the ribs generously with salt and pepper, then arrange them on the rack with the meaty side facing up.
  • Roast in the preheated oven until the meat is tender and easily pulls apart between the bones or reaches an internal temperature of 180 degrees F (83 degrees C), about 2 1/2 to 3 hours. Allow it to cool completely after removing from the oven.
  • After allowing the ribs to cool, expertly slice them into single, mouthwatering portions.
  • In a shallow bowl, add the flour. In a separate small bowl, put the beaten eggs. Use a food processor to finely crush the crackers until you have around 2 cups of crumbs. In another shallow bowl, combine the crumbs with 1 tablespoon coarse black pepper, granulated garlic, and 1 teaspoon kosher salt.
  • Coat ribs in flour, then dunk in eggs, and press into crumb mixture. Set aside.
  • Preheat oil in a deep 9-inch skillet to 350 degrees F (175 degrees C). Carefully place ribs meat-side down into the hot oil ensuring they are 3/4 covered. Fry ribs in batches until crispy and golden brown, about 1 1/2 to 2 minutes. Transfer ribs to a paper towel-lined plate to drain.
  • Sprinkle Cajun seasoning over hot ribs.
  • Create the dressing by blending mayonnaise, buttermilk, chives, cheese, Cajun seasoning, vinegar, and garlic until fully incorporated.
  • Present the ribs alongside the flavorful dressing.
