Elevate classic fried potatoes with a kick of flavor by adding Hatch chiles.
Ingredients:
  • 2 Hatch chile peppers
  • 2 tablespoons vegetable oil
  • 1 large russet potato
  • 0.5 medium onion, sliced
  • 1 pinch seasoned salt (such as LAWRY'S®), or to taste
  • freshly cracked black pepper to taste
Instructions:
  • 1. Char Hatch chiles on a gas stove over medium heat, flipping occasionally, until blackened, about 5 minutes. Let cool in a sealed plastic bag for 7 to 8 minutes. Peel, deseed, and slice the chiles.
  • Thinly slice the potato using a mandoline for even thickness.
  • Heat oil in a large skillet over medium-high heat until shimmering. Add potato slices and fry without stirring until they begin to brown and soften, about 8 to 12 minutes. Add onion slices and chiles, then season with seasoned salt and black pepper. Stir well and continue cooking until onions are translucent and potatoes are fully softened and browned on the other side, about 5 to 8 minutes.
