County Fair Style Kool-Aid Drop Doughnuts

Homemade Kool-Aid doughnuts - irresistible fair treat, now in your kitchen!
Ingredients:
  • 2 quarts vegetable oil for frying
  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 (.13 ounce) envelope unsweetened soft drink mix, any flavor (such as KOOL-AID®)
  • 2 eggs
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
Instructions:
  • In a large bowl, combine 3 cups of flour, 1 cup of sugar, baking powder, salt, and half a packet of soft drink mix. Heat oil in a deep-fryer or large saucepan to 365 degrees F (185 degrees C).
  • In a large bowl, vigorously whisk together milk, eggs, butter, and vanilla extract until well combined. Gradually fold in the flour mixture until a smooth batter consistency similar to thick pancake batter is achieved.
  • Spoon batter into the hot oil using large spoonfuls (about 2 teaspoons each) and fry until deep golden brown all over, for 2 to 3 minutes. Place on a platter lined with paper towels to drain.
  • Combine 1 cup of sugar with half a packet of soft drink mix in a flat-bottomed dish. Roll the still-hot drained donuts in the sugar mixture, then let them cool slightly on a fresh set of paper towels before serving warm.
