Cowboy BBQ Chicken Pizza

Delicious cowboy calzone pizza with a hearty fold-over crust.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1/4 cup sour cream
  • 1/4 cup very hot water
  • 1 container (18 oz) refrigerated original barbecue sauce with shredded chicken
  • 1/4 cup chopped cooked bacon (about 4 slices from 2.2-oz package)
  • 1 1/2 cups shredded Colby-Monterey Jack cheese (6 oz)
Instructions:
  • Preheat oven to 400°F. Combine Bisquick mix, sour cream, and hot water in a medium bowl, stirring with a fork until a soft dough forms. Transfer dough onto a Bisquick-dusted surface, shape into a ball, and knead 5 times. Roll the dough out into a 14-inch circle, fold it in half, then unfold and place on an ungreased large cookie sheet.
  • Spread the chicken mixture evenly over the dough, leaving a 2-inch border. Fold the edges over the chicken mixture. Add half of the bacon on top, followed by a sprinkle of cheese and the remaining bacon.
  • Bake until the crust is a light golden brown and the cheese is fully melted, approximately 20-25 minutes.
