Savory bison burger with sage and BBQ sauce.
Ingredients:
  • 2 pounds ground bison (buffalo)
  • 2 tablespoons finely chopped fresh sage
  • 1 1/2 teaspoons salt
  • 2 teaspoons black pepper
  • 1/2 onion, finely chopped
  • 2 tablespoons extra virgin olive oil
  • Smoky barbecue sauce
Instructions:
  • Sauté the onions in olive oil over medium-high heat until they turn translucent, then allow them to cool.
  • Combine ground bison meat with onions, sage, salt, and pepper: Once the onions have cooled, gently mix them into the bison meat using your clean hands. Be careful not to overwork the meat, simply fold until everything is well combined.
  • Shape meat into patties weighing 1/4 to 1/3 pound each. Press a slight indentation in the center of each patty to maintain a consistent disk shape while cooking.
  • Cook the burgers: Grill or fry the burgers over medium heat for 6-7 minutes per side, adjusting based on thickness and desired doneness (140°F for medium rare, 160°F for well done). Avoid pressing down on the burgers and limit flipping. Let them rest for 5 minutes before serving with lettuce, tomato, and smoky barbecue sauce.
