Cowboy Casserole

Cowboy-inspired BBQ beef and bean casserole topped with flaky biscuits.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 can (16 oz) baked beans
  • 1/2 cup barbecue sauce
  • 2/3 cup milk
  • 1 tablespoon butter or margarine, softened
  • 1/2 cup shredded Cheddar cheese (2 oz)
Instructions:
  • Preheat oven to 425°F. Cook ground beef in a 10-inch skillet over medium-high heat for 5 to 7 minutes, stirring occasionally, until fully cooked; drain any excess fat.
  • Combine the baked beans and barbecue sauce with the beef. Bring to a boil, stirring occasionally. Transfer the mixture to a 2-quart casserole dish, no need to grease it.
  • In a medium bowl, combine Bisquick mix, milk, and butter until a soft dough forms.
  • Scoop 12 spoonfuls of dough onto the beef mixture.
  • Bake uncovered for 18 to 22 minutes until the topping is golden brown. Sprinkle with cheese and bake for an additional 3 minutes, or until the cheese is melted.
