Cowboy Cookies: Packed with white chocolate, macadamia nuts, and oats for a deliciously hearty treat loved by all.
Ingredients:
  • 1.5 cups margarine, softened
  • 0.75 cup white sugar
  • 2.25 cups packed brown sugar
  • 2 teaspoons almond extract
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon salt
  • 3 cups regular rolled oats
  • 1.5 cups sweetened flaked coconut
  • 4 (1 ounce) squares white chocolate, chopped
  • 1 (3.5 ounce) jar coarsely chopped macadamia nuts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give two cookie sheets a gentle grease.
  • In a mixing bowl, cream together the margarine, white sugar, and brown sugar until light and fluffy. Add the eggs one at a time, ensuring each is thoroughly blended. Stir in the vanilla and almond extracts.
  • Combine flour, baking soda, salt, and rolled oats in a mixing bowl until well mixed. Add this flour mixture to the sugar mixture. Fold in coconut, white chocolate, and macadamia nuts until evenly distributed. Drop by tablespoonfuls onto prepared cookie sheets, spacing them 1 inch apart.
  • Bake in a preheated oven until the centers are set and the edges are golden brown, which should take about 15 minutes. Allow them to cool for 3 minutes on the baking sheets before transferring them to a cooling rack.
