Vibrant salsa bursting with beans and fresh vegetables, perfect for enhancing flavors when made in advance.
Ingredients:
  • 5 small Cucumber, with peel, raw
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can corn, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1.5 cups Italian-style salad dressing
  • 1 large tomato, seeded and diced
  • 1 large red onion, diced
  • 5 bell peppers, mini sweet peppers
  • 5 medium green onions, chopped
  • 0.25 cup chopped cilantro, or to taste
  • 1 pinch garlic powder, or to taste
Instructions:
  • Mix together cucumbers, black beans, black-eyed peas, corn, diced tomatoes, red onion, sweet peppers, green onions, and cilantro. Add dressing and sprinkle with garlic powder. Stir until well combined.
  • Chill for 2 to 8 hours for the flavors to meld. Stir thoroughly before serving.
